Combine sugar, pumpkin pie spice, and the pumpkin purée, then refrigerate until ready to use.
Gently roll the puff pastry with a rolling pin to flatten any creases. Spread 1/3 of pumpkin/sugar filling onto one sheet.
Brush each twist with egg and milk mixture and sprinkle with pumpkin and sugar mixture. Bake for 15 to 20 minutes or until golden brown.
